A gauge cock is the small isolating valve that sits directly under a pressure gauge. Closing it lets the gauge be removed, checked or replaced while the line stays in service, and the small vent port in the body bleeds the trapped pressure between the cock and the gauge so the gauge returns to zero and can be read against atmosphere.
The items photographed are brass quarter-turn plug cocks with an insulated lever handle, offered in a female x female and a male x female pattern, with a bleed screw beneath the body. Brass is used because the duty is low flow and the medium is usually air, water, oil or a non-corrosive vapour; on aggressive media or steam a stainless gauge valve is specified instead.
Size the cock to the gauge, not to the pipe. EN 837-1, the standard for Bourdon tube pressure gauges, fixes the connection threads a gauge is supplied with - G1/4 B and G1/2 B parallel and M20 x 1.5 metric are the common ones - and the cock has to match that thread on the gauge side and the tapping on the process side. State both threads, and state whether the male x female or the female x female pattern is wanted.
